Cottage Cheese Banana Bread

A lightly sweetened wheat-flour banana loaf made with blended cottage cheese and cut into eight thick slices.

Ingredients
  • 240g plain wheat flour
  • 300g peeled ripe banana, mashed
  • 250g cottage cheese (about 2% fat)
  • 2 large eggs (100g without shells)
  • 40g caster sugar
  • 30g olive oil
  • 8g baking powder (2 tsp)
  • 2g cinnamon (1 tsp)
  • 1g salt

    Heat the oven to 180°C conventional / 160°C fan. Line a 23 × 13cm loaf tin with baking paper. This recipe uses wheat flour to make a sliced bread crumb, not a baked-oat casserole.

    Blend the cottage cheese, eggs and oil until smooth. Whisk into the mashed banana and sugar in a mixing bowl.

    In a second bowl, combine the flour, baking powder, cinnamon and salt. Fold the dry ingredients into the banana mixture just until no dry flour remains; do not beat the batter.

    Scrape into the tin and level the top. Bake for 50–60 minutes until a skewer inserted in the centre comes out without wet batter and the centre reaches at least 71°C. Tent with foil if the top browns too soon.

    Rest in the tin for 10 minutes, then lift onto a wire rack and cool fully before cutting into eight equal slices. The total time excludes full cooling.

Storage & reheating

Cool fully on a rack, then wrap and refrigerate at 4°C or below for up to 3 days. Freeze slices with baking paper between them for up to 2 months for best quality. Thaw in the fridge and eat cold, or toast gently until warmed through. Do not leave the loaf sealed while warm, as condensation makes it soggy.

Substitutions

Use a baking-specific gluten-free flour blend only with its recommended adjustments; a straight oat-flour swap will change the texture substantially. Any nut, chocolate or yogurt toppings are additional.
