How to Batch Cook Chicken 5 Different Ways

Chicken is the backbone of most meal prep plans: high protein, cheap, and works in almost anything. The problem is cooking it the same way every week. Here are five methods, each producing a different texture and flavour, so the same ingredient covers totally different meals.

Why the Method Matters

Oven-baked chicken slices hold their shape in wraps. Poached chicken pulls apart cleanly for salads. Slow cooker chicken falls to shreds for tacos. Pick the wrong method for the wrong meal and you get a mediocre result, even if the seasoning is right. The method should match how you plan to eat it.

One rule applies across all five methods: chicken is safe when the internal temperature reaches 74°C / 165°F. A cheap probe thermometer removes all guesswork and stops you from overcooking it dry trying to play it safe.

The 5 Methods

Oven-Baked (Sheet Pan)

Season chicken breasts or thighs with olive oil, salt, pepper, and whatever spice blend suits the week: smoked paprika, Italian herbs, za'atar, or straight garlic powder. Lay flat on a lined tray with no overlap. Bake at 200°C / 400°F for 22–28 minutes depending on thickness, then rest 5 minutes before slicing. Two trays in the oven at once gets you 1.5–2 kg cooked in a single session.

Result: firm, sliceable pieces that hold their shape in wraps, grain bowls, and stir-fries.

Poached (Best for Shredding)

Place chicken breasts in a wide pan and cover with cold water or stock. Add aromatics: half an onion, a couple of garlic cloves, a bay leaf, a few peppercorns. Bring to a gentle simmer over medium heat, then drop to low immediately. Cook 12–15 minutes until the internal temp hits 74°C. Pull the chicken out and shred with two forks while it's still warm. As it cools, the muscle fibres tighten and shredding gets much harder.

Result: very moist, neutral-flavoured chicken that soaks up whatever sauce you add to it.

Slow Cooker (Hands-Off)

Add chicken to the slow cooker with half a cup of liquid per 500g: stock, salsa, coconut milk, or plain water with seasoning. Cook on LOW for 4–5 hours or HIGH for 2–3 hours. Leave the lid on the whole time. When done, shred directly in the pot and stir through the cooking juices so the chicken reabsorbs the flavour. You can run 1.5–2 kg completely unattended.

Result: fall-apart tender chicken, best for anything with a sauce.

Air Fryer (Crispy, Fast)

Pound breasts to an even 2cm thickness so they cook at the same rate. Season well: paprika, garlic powder, and black pepper work particularly well here because the air fryer crisps the outer layer. Cook at 190°C / 375°F for 10–12 minutes, flipping halfway. Don't stack or overlap in the basket. If batch cooking, do two rounds rather than cramming everything in. Rest 3 minutes before slicing.

Result: lightly crispy outside, juicy inside. Probably the best texture for eating on its own.

Stovetop Sear (Most Flavour)

Get a cast-iron or stainless steel pan smoking hot before anything goes in. Add a thin layer of oil, then lay the seasoned chicken down. Don't touch it for 3–4 minutes: you need uninterrupted contact with the pan for a proper crust. Flip once, cook another 3 minutes, then drop the heat to medium, cover, and cook a final 5 minutes through. Direct contact with a very hot surface builds flavour that an oven or slow cooker can't replicate.

Result: deeply golden crust, juicy centre. Best when flavour is the priority.

Storage Rules (All Methods)

Cool cooked chicken to room temperature within 2 hours before refrigerating. Fridge: up to 4 days in a sealed container. Freezer: up to 3 months, portioned. Always reheat to 74°C before eating. Label containers with the method and date.
