Freezer Breakfast Burritos with Eggs & Turkey

Scrambled eggs, lean turkey and black beans wrapped with peppers and cheddar for a breakfast you can prep ahead.

Ingredients
  • 4 large flour tortillas (240g total)
  • 250g lean turkey mince (about 7% fat)
  • 4 large eggs (200g without shells)
  • 120g cooked black beans, drained and rinsed
  • 150g red pepper, diced
  • 40g cheddar, grated
  • 5g olive oil (1 tsp)
  • 2g ground cumin (1 tsp)
  • 2g smoked paprika (1 tsp)
  • 80g tomato salsa, to serve separately
  • 1g salt, or to taste
Instructions

    Heat the oil in a large non-stick frying pan over medium-high heat. Add the turkey and pepper; cook for 8–10 minutes, breaking up the mince, until the turkey reaches 74°C in the centre and the pepper has softened.

    Stir in the drained beans, cumin and paprika. Cook for 2 minutes, then transfer the filling to a bowl.

    Beat the eggs with the salt. Lower the heat to medium-low and scramble them in the same non-stick pan for 3–4 minutes until fully set.

    Warm the tortillas briefly in a dry pan until flexible. Divide the turkey mixture, scrambled eggs and cheddar between them. Leave space around each edge, fold in the sides and roll tightly.

    For immediate serving, toast each wrap seam-side down in a dry pan for 1–2 minutes per side. Serve with 20g salsa per burrito. For meal prep, keep the salsa separate and follow the storage instructions below.

Storage & reheating

Cool promptly in shallow containers and refrigerate within 2 hours at 4°C or below. Keep for up to 3 days, or freeze individually wrapped for up to 2 months for best quality. Thaw overnight in the fridge, unwrap and microwave covered for 2–3 minutes, turning halfway; continue in short bursts until the centre reaches 74°C. Crisp in a dry pan if desired.

Substitutions

Use lean chicken mince in place of turkey, or use cooked lentils for a vegetarian version; nutrition will change.
