
Apple Cinnamon Protein Waffles
Cottage cheese and oat waffles topped with warm cinnamon apples and a spoonful of Greek yogurt.

Equipment: Blender and waffle maker
- 180g rolled oats
- 300g cottage cheese (about 2% fat)
- 3 large eggs (150g without shells)
- 100ml semi-skimmed milk
- 300g apple, cored and thinly sliced
- 200g plain 0% Greek yogurt
- 10g olive oil, divided
- 4g baking powder (1 tsp)
- 4g ground cinnamon (2 tsp), divided
- 30ml water, for the apples

Preheat a non-stick waffle maker according to its instructions. Blend the oats to a flour, then add the cottage cheese, eggs, milk, baking powder and half the cinnamon. Blend until smooth and rest for 5 minutes.

Heat 5g oil in a frying pan over medium heat. Add the apples, remaining cinnamon and 30ml water; cook for 6–8 minutes, stirring, until tender and the water has evaporated.

Use the remaining 5g oil to lightly grease the waffle plates across all batches. Divide the batter into four equal portions, then use the amount your waffle maker recommends for each waffle; do not overfill.

Cook each batch for about 4–6 minutes, until golden, steam has mostly subsided and the centre is set and reaches 71°C. Transfer to a wire rack so the waffles stay crisp. The number of waffles depends on your machine.

Divide all cooked waffles between four servings. Top each with one-quarter of the apples and 50g Greek yogurt. Extra batches may increase total cooking time.
Storage & reheating
Cool waffles on a rack and refrigerate within 2 hours at 4°C or below; keep the apples and yogurt separate. Keep for up to 3 days. Freeze waffles separated with baking paper for up to 2 months for best quality. Thaw overnight in the fridge, then heat in a toaster oven or oven at 180°C for about 5–8 minutes until the centre reaches 74°C. Reheat the apples separately and add yogurt after heating.
Substitutions
Use certified gluten-free oats if needed. Pears can replace the apples; nutrition will change.
