Honey Garlic Chicken Stir Fry
- 280g chicken breast, sliced thin
- 2 noodle nests
- 1 red pepper
- 1 head broccoli
- 3 tbsp honey
- 2 garlic cloves
- 2 tbsp soy sauce
- 1 tsp cornflour
- 1
Slice the chicken breast thinly across the grain. Toss with a pinch of salt, pepper, and the cornflour until lightly coated.
- 2
Cook the noodle nests in boiling water per packet (usually 3–4 min). Drain and set aside.
- 3
Mince the garlic. Cut the red pepper into thin strips and break the broccoli into florets.
- 4
Heat a wok over very high heat until smoking. Add oil, then the chicken in a single layer — cook undisturbed 1–2 min to get colour, then stir-fry 2–3 min more until just cooked. Remove to a plate.
- 5
Add another splash of oil. Stir-fry the broccoli 2 min, then add the pepper and garlic and cook 1 min more.
- 6
Mix honey, soy sauce, and 2 tbsp water in a small bowl. Return the chicken to the wok, pour over the sauce, and toss on high heat for 1–2 min until everything is glazed and the sauce has thickened.
- 7
Add the noodles, toss to combine, and serve immediately.
