Tempeh Burrito Bowls

Smoky tempeh crumble, brown rice, black beans and colourful toppings in a filling plant-based bowl.

Ingredients
  • 400g plain tempeh, crumbled
  • 200g dry brown rice
  • 240g cooked black beans, drained and rinsed
  • 160g sweetcorn, drained
  • 200g tomatoes, diced
  • 160g avocado flesh, sliced
  • 10g olive oil
  • 30g lime juice
  • 4g smoked paprika (2 tsp)
  • 4g cumin (2 tsp)
  • 10g coriander, chopped
  • 2g salt, divided
  • 60ml water, for the tempeh
Instructions

    Rinse the rice and cook according to its packet instructions, usually 25–30 minutes. Keep covered for 5 minutes, then fluff with a fork.

    While the rice cooks, heat the oil in a large frying pan. Add the crumbled tempeh and cook over medium-high heat for 6–8 minutes, stirring, until lightly browned.

    Add the paprika, cumin, half the salt and 60ml water. Reduce the heat and cook for 3–4 minutes until the tempeh is hot through and coated in the spices.

    Add the black beans and sweetcorn and cook for 3–4 minutes until hot. Toss the diced tomatoes with half the lime juice and the remaining salt.

    Divide the rice and tempeh mixture between four bowls. Add the tomato, avocado and coriander; finish with the remaining lime juice. For meal prep, keep the fresh toppings separate.

Storage & reheating

Spread cooked rice in a shallow container and refrigerate promptly, ideally within 1 hour. Store the rice and tempeh mixture at 4°C or below and eat within 24 hours; freeze additional portions promptly for up to 2 months for best quality. Thaw overnight in the fridge and reheat once until every part reaches 74°C. Add freshly cut avocado and the cold toppings after reheating.

Substitutions

Use firm tofu instead of tempeh, cooking until golden; protein and texture will change. Check the tempeh label if you need a gluten-free product.
