Broccoli, Cheddar & Quinoa Bake

Cooked quinoa and broccoli set into a savoury egg-and-cheddar casserole with a golden cheese top.

Ingredients
  • 200g dry quinoa, rinsed
  • 400g broccoli, cut into small florets
  • 100g vegetarian cheddar, grated
  • 3 large eggs (150g without shells)
  • 200ml semi-skimmed milk
  • 100g onion, finely diced
  • 6g garlic, minced
  • 10g olive oil, divided
  • 1g salt
  • 400ml water, for the quinoa
Instructions

    Heat the oven to 190°C conventional / 170°C fan. Simmer the rinsed quinoa with 400ml water, covered, for about 15 minutes until tender and the water is absorbed. Rest covered for 5 minutes, then fluff and cool slightly.

    Meanwhile, steam or boil the broccoli for 3 minutes, then drain thoroughly. Heat 5g oil in a small pan and soften the onion for 5 minutes; add the garlic for the last 30 seconds.

    Grease a 25 × 20cm baking dish with the remaining oil. Whisk the eggs, milk and salt together in a large bowl.

    Stir the slightly cooled quinoa, drained broccoli, onion mixture and 70g cheddar into the egg mixture. Transfer to the dish and scatter over the remaining 30g cheddar.

    Bake for 25–30 minutes until golden, set rather than wet in the centre, and at least 74°C internally. Rest for 5 minutes before dividing into four portions.

Storage & reheating

Refrigerate promptly in shallow containers, within 2 hours, at 4°C or below. Keep for up to 3 days. Freeze individual portions for up to 2 months for best quality. Thaw overnight in the fridge before reheating. Reheat a covered portion in the microwave for about 2–4 minutes, rotating halfway, or bake covered at 180°C for about 20 minutes. Continue until the centre reaches 74°C.

Substitutions

Use cauliflower instead of broccoli. Choose cheese labelled suitable for vegetarians. Gluten-free ingredients may still require checking packaged products for cross-contact.
