Savoury Mushroom & Egg Oats

Creamy stock-simmered oat porridge topped with browned mushrooms, Parmesan and a fully cooked egg.

Ingredients
  • 100g rolled oats
  • 400ml vegetable stock
  • 250g mushrooms, sliced
  • 2 large eggs (100g without shells)
  • 20g vegetarian Parmesan-style hard cheese, grated
  • 10g olive oil, divided
  • 6g garlic, minced
  • 10g parsley, chopped
  • 0.5g salt, only if needed
Instructions

    Bring the vegetable stock to a simmer in a small saucepan. Stir in the oats and cook gently for 6–8 minutes, stirring often, until creamy. Add a splash of water if you prefer a looser porridge.

    While the oats cook, heat 5g oil in a non-stick frying pan. Add the mushrooms and cook over medium-high heat for 6–8 minutes until their liquid evaporates and the edges brown. Add the garlic for the last minute, then transfer to a plate.

    Heat the remaining oil in the pan over medium-low heat. Crack in the eggs, cover and cook for 4–6 minutes until both whites and yolks are fully set; allow longer if needed.

    Take the oats off the heat and stir in the vegetarian hard cheese. Taste before adding salt because stock and cheese are already salty.

    Divide the savoury porridge between two bowls. Top each with half the mushrooms, one cooked egg and parsley.

Storage & reheating

Refrigerate promptly in shallow containers, within 2 hours, at 4°C or below. Keep the oats and mushrooms for up to 2 days. For the best texture, cook the egg fresh when serving. Reheat the oats with 30–50ml water, stirring, until they reach 74°C. If storing a cooked egg, refrigerate it separately and reheat fully to 74°C; it will become firmer.

Substitutions

Use a vegetarian hard cheese labelled suitable for vegetarians. Use certified gluten-free oats and gluten-free stock if needed. Extra eggs or cheese change nutrition.
