
Crispy Smash Burgers
- 300g beef mince (20% fat)
- 2 brioche buns
- 2 slices cheddar
- 1 onion
- Lettuce
- 2 tbsp mayo
- 1 tbsp ketchup
- 1 tsp mustard
- Pickles

Divide the beef mince into 4 equal loosely formed balls — don't compact them. Season generously on the outside with salt and pepper only.

Slice the onion into thin rounds. Cook in a little oil in your skillet over medium heat for 8–10 min until golden and soft. Remove and set aside.

Raise the heat to high until the skillet is very hot. Add the beef balls, spaced well apart. Immediately smash flat with a wide spatula pressed hard for 10 seconds — aim for thin patties.

Cook undisturbed 2 min until a deep brown crust forms and the edges are visibly crispy. Flip, add a slice of cheddar to each, and cook 1 min more.

Mix mayo, ketchup, and mustard together for the sauce.

Split and lightly toast the brioche buns in the skillet. Spread the sauce on both halves.

Layer: bottom bun, lettuce, smash patty with melted cheese, fried onions, pickles, top bun. Press and serve immediately.
