
Sweet Chilli Chicken Rice Boxes
- 300g chicken mince
- 150g rice
- 1 carrot
- 1/2 broccoli head
- 2 tbsp sweet chilli sauce
- 1 tsp soy sauce
- 1 tsp sesame oil

Rinse the rice and cook with 300ml water — bring to a boil, cover, simmer 12 min, then rest off heat 5 min.

Peel and grate the carrot. Cut the broccoli into small florets. Blanch both in boiling salted water for 2 min, then drain and set aside.

Heat a wok or large pan over high heat with a splash of oil. Add the chicken mince and cook, breaking it up, for 4–5 min until browned all over with no pink remaining.

Push the mince to one side. Add the carrot and broccoli and stir-fry 1–2 min.

Mix sweet chilli sauce, soy sauce, and sesame oil together, then pour over the pan. Toss everything together until well coated and glossy.

Fluff the rice and pack into boxes or bowls. Top with the chicken and veg mixture.
